Acacia
Raw honey
Acacia honey is collected by bees from two types of acacia trees – white and yellow. The color of the honey depends on the type of acacia. For example, honey from yellow acacia is light yellow, while honey from white acacia is nearly colorless. It has a delicate, almost neutral aroma with light floral notes and a very mild, delicate taste without bitterness, making it particularly popular among honey enthusiasts. Due to its high fructose content, acacia honey is easily absorbed by the body, does not crystallize for a long time, and remains liquid for an extended period, making it suitable for diabetic and infant diets. When it does crystallize, it forms a fine-grained mass and changes to a color ranging from white cream to golden yellow.
