Delicious Homemade Ice Cream

Ingredients:
- 450 ml milk
- 5 egg yolks
- 150 ml heavy cream (33% fat)
- 120 g sugar
- 180 g dark chocolate (55% cocoa content)

For the sauce:
Choco Honey Spiced Gin or Hot Choco Honey Instructions:
1. Prepare the milk and chocolate mixture:
- Heat the milk in a saucepan until it’s just about to boil, but do not let it boil.
- Remove from heat and add the chocolate. Stir until the chocolate is completely melted and blended into the milk.
2. Mix egg yolks and sugar:
- In a separate bowl, whisk together the egg yolks and sugar until pale and slightly thickened.
- Gradually add the milk-chocolate mixture to the egg yolks, stirring continuously.
3. Cook the mixture:
- Pour the combined mixture back into the saucepan.
- Cook over medium heat, stirring constantly, until the mixture thickens slightly (about 7 minutes), but do not let it boil. Once you see the first bubbles, remove from heat.
4. Add cream:
- Stir in the heavy cream until well combined.
5. Cool and freeze:
- Let the mixture cool to room temperature.
- Pour into ice cream molds or a freezer-safe container and place in the freezer.
6. Churn the ice cream:
- After 1.5 hours, take the ice cream out of the freezer and stir vigorously to break up any ice crystals. Return to the freezer.
- Repeat the stirring process after 40 minutes. Do this twice more, then let the ice cream freeze completely.
Before serving, top with Choco Honey Spiced Gin sauce or for those who like a more intense flavour, top with our Hot Choco Honey sauce.
